Main Courses
3 Chicken Breasts (boneless, skinless, cut into 1-inch pieces)
1 Tbsp. Southwest Chipotle Seasoning
1 Pkg. Corn Tortillas (about 10)
1 lb. Mexican Cheese, grated
1 can Diced Ortega Green chilies
1 yellow onion (chopped)
1 large can La Victoria Enchilada Sauce, mild
1st- Microwave in the Stack Cooker with Colander or the Oval Microwave
Cooker with High-Fat Rack the chicken seasoned with the Southwest
Chipotle seasoning on high for 5 minutes, stirring halfway through.
2nd – Place the meat a little at a time into the Quick Chef and shred3rd – Open Enchilada sauce with E Series Can Opener and pour a small
amount into the Stack Cooker. Place the tortillas into the base and add
meat, chilies, onions and cheese. Then begin to layer all the way up to the
top of the container. End the casserole with sauce on the top. Place the
casserole into the microwave and cook on High for 13 minutes.
4 eggs
1 cup whipping cream
1 pkg. pre-cooked bacon
2 green onions (chopped)
1 small mushrooms
1 ½ cups Broccoli
1 bag grated cheddar cheese
1/3 cup flour
Salt & pepper to taste
Option: 1 -2 tsp Southwest Chipotle spice
Place bacon, chopped onions and fresh broccoli in stack cooker and
microwave for 2 min. Mix eggs and whipping cream and salt and pepper. Add in
bacon, broccoli, mushrooms and onions. Stir. Mix flour with cheese and add to
quiche. Cook on high 12 min. Let stand 4 min.
1-2 lb Salamon (you can use the frozen fillets from Costco)
1 tbsp Cilantro Mojo Spice
In Stack cooker base with colander place salmon. Sprinkle both sides
generously with Cilantro Mojo and cook 4 min a pound. If they are
larger thicker fillets then cook 6 min a pound. Let stand 1 min. per
every 6 min. and serve!
4 lb Whole Chicken
2 tbsp Simple Indulgence Tandori Spice
Teriyaki sauce
12 oz pineapple chunks
1 lemon or lime
Clean out the insides of the chicken. Place whole chicken in Stack Cooker or
Oval Microwave Cooker. Pour Teriyaki sauce on top of chicken. Sprinkle
generously with the Spice. Fill cavity of chicken with pineapple chunks.
Cover and cook for 6 min per pound. Let sit for a 1 minute for every 6
minutes cooked. Enjoy!
2lb Ground Beef
1 pkg. Corn or Flour Tortillas
2 tsp South West Chipotle
1 large can Enchilada Sauce
1lb Mixed Cheese cheddar and white cheese
Optional: 1 yellow onion, Chopped olives
Add Southwest Chipotle seasonings into meat, the onions may be added
now or at the end. Brown Ground Beef in the base of the Tupperware Oval
Cooker with Colander Base Colander at 6 min. per lb. Stopping half way
through and breaking it up with a large spoon. Drain meat and rinse out Oval
Cooker. Place Deep Colander Ring on top of base. Dip tortilla into the
sauce and lay it in the Oval Cooker. Layer meat, cheese, onions, olives, and
tortilla with sauce. Continue to make layers until complete. cook for 15 min.
4 lb Whole Chicken
2 tbsp Simple Indulgence Southwest Chipotle Spice
1 onion
1 lemon or lime
Clean out the insides of the chicken. Slice onion in half, slicing one half
completely. Place whole chicken in Stack Cooker or Oval Microwave
Cooker. Place the un-sliced onion in the cavity of the chicken with ½ the
lemon. Squeeze ½ lemon juice over the skin of the chicken. Sprinkle with
the Spice. Place sliced onions around the chicken. Cover and cook for 6
min per pound. Let sit for a 1 minute for every 6 minutes cooked. Enjoy!

1 lb. boneless, skinless chicken breast halves, sliced in thin strips
2 Tbsp. Tupperware Southwest Chipotle Seasoning
1/2 cup chopped red pepper
1/2 cup chopped onion
Coat chicken strips with Seasoning, and add peppers and onions. Then follow one of these cooking directions:
Microwave: Place 1 cup of water in Base of Oval Microwave Cooker; place coated chicken and veggies in Shallow Colander. Cover and microwave on High for 5 minutes. Stir and microwave an additional 3-5 minutes until chicken is thoroughly cooked.
Stovetop: Spray pan with non-stick cooking spray. Place above mixture on Silicone Wonder™ Mat on baking sheet and bake at 350°F for 10 minutes; turn and bake for an additional 10 minutes until chicken is thoroughly cooked.
Side Dish Suggestion: Serve over Spanish Rice with black beans. Toppings can include shredded cheese, salsa and sour cream.

1/2 cup white wine
2 cloves garlic, minced
2 Tbsp. Tupperware Ginger Teriyaki Seasoning
1 lb. shrimp, peeled and deveined
8 oz. thin spaghetti, cooked
In Base of Oval Microwave Cooker, place wine and garlic. In Shallow Colander, place shrimp seasoned with Ginger Teriyaki Seasoning. Microwave on high for about 4 minutes until shrimp turns pink. Toss shrimp and hot pasta in white wine mixture. Serve immediately.
Serving Suggestion: Add 2 Tbsp. olive oil, fresh ground pepper and grated Parmesan cheese to taste.

1 small onion, chopped (1/2 cup)
2 lb. extra lean ground beef (7% fat)
